We make soup all the time an...This is great advice! We make soup all the time and it is the perfect left-over meal. Also, if you save your scraps from veggies for the week or so before, you can easily make veggie stock and use that as a starter for your soups. Things like onion peels and ends, celery stalk ends and centers, carrots peels, etc. Just toss it all in a lidded bowl in your fridge and when you're ready, put it all in a pot, cover with water, and boil until all the veggies are super soft and the water is colorful. The strain out veggies and you have delicious stock! All from what would be "trash".
